Fermentation
Process by which microorganisms such as yeast transform sugars without using oxygen.
It is an anaerobic metabolic process in which the cell obtains ATP by substrate-level phosphorylation, without an electron transport chain. The electrons that glycolysis passes to NAD⁺ are then transferred to an organic compound, regenerating the NAD⁺ the pathway needs to keep running.
Fermentation allows ATP production to continue when oxygen is scarce or absent. Its products and applications are fundamental in microbial ecosystems, foods, beverages, and industrial processes.
The video recalls that Louis Pasteur showed in the nineteenth century that yeast was responsible for the process. In Saccharomyces cerevisiae, alcoholic fermentation converts pyruvate into ethanol and carbon dioxide and regenerates NAD to sustain energy production without oxygen.
