β-galactosidase
Bacterial enzyme that breaks down lactose into glucose and galactose.
It is an enzyme, the product of one of the lac operon genes, that hydrolyzes the glycosidic bond of lactose.
It allows bacteria such as Escherichia coli to use lactose as a carbon and energy source when it is the only nutrient available in the medium.
The video states that its production is switched on together with transcription of the lac operon genes and that it breaks down lactose into glucose and galactose.
