Acetaldehyde
Intermediate compound of alcoholic fermentation.
It is a two-carbon aldehyde, with the formula CH₃CHO, that acts as a reactive intermediate in several metabolic transformations. Its carbonyl group can accept electrons in oxidation-reduction reactions.
In alcoholic fermentation, acetaldehyde connects pyruvate decarboxylation with ethanol formation. It is also relevant because of its chemical reactivity and toxic effects when it accumulates.
The video shows that it forms when pyruvate decarboxylase decarboxylates pyruvate and releases carbon dioxide, the gas responsible for beer's bubbles. Alcohol dehydrogenase then reduces it to ethanol.
